Fresh Apple Cake

"This delicious cake is great with coffee ~ the recipe is from the Houston Livestock Show and Rodeo cookbook, 1981! It’s been part of our holiday tradition for many years and we love it."


4 c. apples, cut up

2 c. sugar

1 c. chopped pecans

3 c. flour

1/4 tsp. cinnamon

1/2 tsp salt

2 tsp baking soda

1 c. vegetable oil

1 tsp. vanilla

2 eggs


Mix apples and sugar and let stand for one hour.  Add dry ingredients to apples.  Then add oil, vanilla and eggs.  Bake at 350 degrees for 1 hour and 15 minutes in greased bundt pan.

"We have made this dish for years and everyone really likes it. We love the rich, creamy texture of the recipe. We could eat it more often, but choose to save it for special occasions!"


2 lb. package tater tots - thawed

2 Tbsp. margarine

1 tsp salt

¼ tsp pepper

1 can of cream of chicken soup

1 16oz container of sour cream

2 cups shredded cheddar cheese



1 ½ cups crushed corn flakes

½ cup melted margarine


Thaw potatoes and mix with other ingredients. Pour into buttered 9x13 dish. Cover with 1 ½ cups of crushed corn flakes and top with ½ cup melted margarine. Bake at 350° for 45 minutes or until bubbly.

1 cup Vegetable Oil

2 packages Active Dry Yeast, 0.25 Ounce Packets

3 tbsp butter

2 tbsp flour

1 tsp salt

1/4 tsp black pepper

1 tsp sugar

1 tbsp chopped onions

1 cup sour cream

4 cans green beans, well drained

8 oz. shredded sharp cheddar cheese

1 cup French's Fried Onion Rings


Over medium heat in a large pot, melt the butter. Stir in the flour, salt, pepper, and sugar. Working quicking so the flour-butter mixture doesn't burn, mix in the chopped onions and then whisk in the sour cream. Remove from heat. 1 - 8oz package of cream cheese, softened

1 - 16 oz container of sour cream

1 package taco seasoning



Shredded lettuce

2 cups shredded cheddar cheese


Mix cream cheese, sour cream and taco seasoning together until smooth. Spread in the bottom of 9x13 pan. Top with chopped tomatoes, salsa, lettuce, and shredded cheese (in that order). Serve with tortilla chips.

“We love these cookies at any time of the year, but there’s something special about making them during the holiday season. This is one of those recipes that you just can’t mess up, and they make great gifts for people, too. I hope you love them as much as we do!”


2 ½ cups all-purpose flour

1 tsp. baking soda

1 tsp. baking powder

1 tsp. cinnamon

1 tsp. nutmeg

½ tsp. salt

1 ½ cups white sugar

½ cup butter, softened

1 cup pumpkin

1 egg

1 tsp. vanilla extract

Semi-sweet chocolate chips (optional)


Preheat the oven to 350 degrees. In a bowl, combine all of the dry ingredients (flour, baking soda, baking powder, cinnamon, nutmeg, and salt). In a separate bowl, beat butter and sugar until well blended. Add the rest of the wet ingredients (egg, vanilla and pumpkin). Gradually add the dry ingredients to the wet ingredients and mix. Add chocolate chips if desired. Use an ice cream scoop to drop cookie batter onto a greased baking sheet and bake for 15-18 minutes.

"When Tim and I married and were talking about the holidays, there were a few items that we both had at family gatherings growing up. This was one of them. Over the years as we had kids, it also became one of David's favorites that he requests."


1 8oz. Cool whip

1 cup pecans

1 cup mini marshmallows

1 box instant pistachio pudding

1 can (1lb 4oz) crushed pineapple in juice


Mix pudding and pineapple together first, then stir in remaining ingredients. Chill and serve.
